Tite Karela kotarkari (Oil-free Bitter Gourd Curry)

Ingredients
  

  • ½ kg bitter gourd
  • 2 tsp cumin/coriander powder
  • 100 gm onion paste
  • 100 gm tomato paste
  • ½ tsp salt
  • ½ tsp turmeric
  • Dry red chili pieces
  • 1 tbsp soya sauce

Instructions
 

  • Barbeque the whole gourd directly over the flame.
  • Clean the gourd water and remove the scales. Slice it.
  • Chop the tomatoes and onion.
  • Heat the pan, and put in some whole cumin and methi, dry chilies, and let them brown.
  • Put in the onion paste, tomato paste/pieces, salt, the masalas, mix and cook for a while. Pour in some water to prevent the Ingredients from sticking to the bottom
  • Add the cooked gourd when the masala mixture is ready, and cook for 5-10 minutes on low heat with the cover on
  • Ready to serve.
