Pre-heat oven or cook-pot to 2500 C.
Put all the Ingredients (except the cinnamon) in the oven-proof with a lid or in a crock-pot. Stir well and cover. Cook for 1 hour.
Remove pot from the oven (or lid from crock-pot) and stir.
Put back in the oven and bake for an additional 45 minutes. You want the rice to be tender and the consistency to be creamy. Be sure not to overcook.
Remove from the oven (or turn off the crock-pot) and let cool for a few minutes with the lid on.
Garnish with cinnamon.
Serve.
