Green Gourd Soup

Ingredients

  • Bottle Gourd Lauki small – ½
  • Parwal Potol – 2 pcs
  • Turai small ridge guard– 1
  • Tendle ivy gourd – 8 pcs
  • Spinach – 1 cup
  • Bayleaf – 1
  • Salt – 1 tsp
  • Pepper – 1 tsp
  • Cumin – ½ tsp
  • Mustard powder – ½ tsp

Instructions

  • Add all vegetables in a pressure cooker with bay leaf and cook 4 to 5 whistles till vegetables are softened
  • Remove from the flame, strain, and reserve stock
  • Puree the vegetables and strain
  • Add the reserve stock and adjust till desired consistency is reached
  • Season with salt, pepper, mustard, and cumin powder
  • Serve hot.
