Double ka Meetha (Khulani ka Meetha)

Ingredients
  

  • 6-8 slices white sandwich bread
  • ¼ cup ghee
  • 1 liter milk
  • ¼ tsp saffron
  • ¼ rose water
  • 1 tsp cardamom powder
  • 1/3 cup sugar
  • 2 tbsp unsalted pistachios sliced
  • 2 tbsp golden raisins

Instructions
 

  • Cut each bread slice diagonally into equal size triangles. Heat ghee in a frying pan. Fry sliced nuts and raisins for a few seconds and transfer to a bowl.
  • In the same ghee, fry the bread slices till they turn golden and crispy on both sides. Transfer the fried bread to a plate and set aside.
  • Soak the saffron strands in 2 tbsp milk and rose water.
  • Heat milk in a heavy-bottomed pan. Add cardamom powder and stir. Allow the milk to simmer over low heat till it reduces to almost half the original amount. Keep stirring the milk at regular intervals to prevent it from burning.
  • Add the saffron, sugar and rose water to the milk. Stir to amalgamate all the Ingredients.
  • Simmer the milk for 5 more minutes and then turn off the heat.
  • Brush a baking dish with ghee. Pre-heat the oven at 1800.
  • Arrange the bread slices in the tray.
  • Pour milk over the bread slices, sprinkle roasted nuts and cover with aluminum foil. Bake in the preheated oven or until the liquids are almost dry.
  • Serve warm
